Anytime Quinoa Salad
Fresh and green with basil, parsley and cucumber. Good for a picnic!
3 cups cooked quinoa (Add 1 cup quinoa to 2 cups water in a pot. Bring to a boil, lower heat, cover pot and simmer 20minutes)
2 tsp each: hemp seeds, chia seeds and flax seeds
3 red radishes, sliced
1 yellow or red bell pepper, diced
1/2 cucumber, diced (peeled if you like)
a handful of fresh basil, chopped
1-2 cloves garlic, minced
1 Tbsp freshly squeezed lemon juice
1 handful parsley
optional: 1/2 to 1 cup garbanzo beans
1 Tbsp olive oil
Directions:
put quinoa in a big salad bowl, add in the rest of the ingredients and mix it up!
I added in some nutrient dense superfoods, the flaxseeds, hemp and chia. You could make the salad without these, but they are a good nutrition boost, rich in healthy oils, fiber and minerals.
