Mushroom Ensalada - Hearty Enough to Be The Meal

So as you all know my daughter is a vegetarian.  She came up with this hearty, delicious and quick meal in itself to have for dinner and the whole family loves loves loves it and daddy looks sad when there is none left for him. 

Mushroom Goat Cheese Ensalada

Serves 4

2 pkgs of porcini mushrooms (sliced) whole but you slice them yourself (lets not be lazy and get carried away here when I say quick) LOL
1 large head of garlic (chopped)
2 Heads of Romain Lettuce - washed and chopped
1/2 cup of pecan nuts chopped
8 tblsps of goat cheese crumbled
balsamic vinegar
olive oil
red onion
salt and pepper

saute garlic until lightly browned and add in mushrooms in olive oil - until softened and slightly carmelized
in the meantime begin arranging your salad, chop salad, and slice onion - put in large bowl and sprinkle goat cheese on top -

when mushroom are done pour mixture on top of salad - hit with a pinch of salt and pepper and add olive oil and balsamic - toss and serve

This is simply amazing - sometimes I like to garnish with just a few grape tomatoes -
Serve with garlic bread and you have a beautiful meal
