What to do for dinner - I am so lazy and not in the mood to cook - Imagine - Well its true sometimes you just think WTH - I need a day off. However my daughter makes this beautiful spinach salad with Goat cheese, mushrooms, and pecans and I thought OMG that would be delightful on Pappardelle pasta.
Pappardelle is my favorite pasta besides of course the obvi - Nonnas lasagna - Hello - so easy heres all you need
1 pkg of pappardelle noodles
1 pkg of cremini mushrooms
3 cloves of garlic
1/4 cup of pecans
olive oil
goat cheese
spinach
parmesan
pepper and salt to taste
Boil pasta in large pot al dente - while pasta boiling make your sauce
1/4 cup of olive oil and 2 tbsp butter
pepper
saute garlic and mushrooms
toast pecans in pan slightly and add spinach to wilt. Add goat cheese and when pasta is cooked drain however leave a bit of the water (this will make it creamier) and not dry
Add pasta to saute pan and mix together - sprinkle with parm and dive in -
I just must say that I am ashamed - I didn't even make ensalada - oh well - enough in the pasta to suffice the need for veggies
