Now and Christmas is the time for Blue Crabs and they are so incredibly sweet and delisious - Wish it could be all year round.
This is one of our favorites - Spagetti with blue crab sauce
First you get the Crabs - FRESH - pick ones that don't look so dirty - makes for easier cleaning
You first need to pick up crab and flip to the underside where you will grab the butt and tear off the back shell - (seems cruel I know - thats why I don't watch and Let HUBBY DO IT)
Once you have removed the back shell - clean out all the inside (guts, furry sides and eggs if any) and then wash them to make sure bottom of crab is clean.
While my hubby is doing this I prepare the sauce for the crabs by:
YOU WILL NEED:
olive oil
1 can of plum tomatoes
1 jar of sauce
1 onion
3 cloves of garlic
parsley
and if you want - which I love add fresh basil
Saute onion and garlic in olive oil until opaque and add tomatoes both can and jar - salt and pepper and a bit of sugar to cut down the acid
Once you have cooked sauce for about 40 minutes you can add cleaned crab - cook another 30 to 40 minutes and while cooking you can boil your spagetti al dente
This for sure is served with chiabatta because you will want to soak up ever drop of the sauce -
The crab shells are very soft therefore you won't require crackers - just break it apart and enjoy how messy it is and you have the best time with your family eating this - I promise. My son had sauce on his shirt, in his hair and his lips were as red as ruby lipstick - Too much fun and very very delissiouso
