Today Being Mother's Day - Not Cooking, however still sharing - Happy Mother's Day to All My Girlfriends

Today is a Day of Celebrating You as not only a Strong Beautiful Women BUT as a MOTHER.  There is no job that could ever compare to being a MOM - (well being a daughter who was the MOM - I guess that counts as difficult) - however satisfying to know that I truly do my part to also be a Good Daughter.  Back to Moms - I want to celebrate this Fabulous DAY by sharing what I am planning today - Going to See MY MOM - who is now in a Alzheimer's Facility (almost a year) after 25 years of living with my family in our Home - well I can't wait to see that little darling. - Then going to the maja-in-laws who will for sure want to go to the cemetary to visit her Husband and  Daughter God Rest their Soles - and we will bring flowers to my Dad as well -


Perhaps we will go to lunch - no concrete plans - and then go to dinner perhaps with my family (daughter, son, and hubby - however hubby not feeling so well so our unplanned events of today may be cancelled LOL) - you know how men are when they are sick - WAH WAH WAH - - May have to restort to PINENUTS (OMG just kidding) - LMAO


Therefore I will probably be making some Soup for the Sicko - or should I say my daughter will unless I kneel on the chair to cook, since I can't stand with this leg thing and my hip -

One Hen (or Half a Hen) depending on how much soup you want - Hens usually have the eggs inside them - and trust me - they are amazing in the soup - makes it a little creamier - Special Italian food markets usually carry hens - or a Farmer's Market for sure will - It makes all the difference in your Chicken Soup being Plain old chicken soup to WOW Now Thats Chicken Soup
Soak Hen and make sure that all feathers are removed - they will loosen during boiling and float to the top of the soup usually, however just in case - EW who wants a feather in their soup -


Large Stock Pot 3/4 full of water
Place Hen in and bring to boil - remove scum that rises while boiling
Once all scum is done - you can add all the rest of the ingredients  -  which ARE


1 large onion
2 Large Carrots
Celery Hearts (I love these so I would put a full heart)
Dandelion (you may add as much or little as you like) - I love this as well so I add alot
Salt and Pepper


Since my Hubby is sick I will also add Fresh Garlic Cloves - this is very good to fight off infection - (along with a dose of amoxicillin and some sinus spray (he will be good to go) and I mean Go to Work tomorrow - LOL
Simmer soup for 2 hours and remove Hen - cut or tear into small pieces - small enough to fit on large soup spoon - Serve with Parmesan Cheese (grated of course) - Its devine - and Healing Healing Healing -


There is one last thing - ENSALADA - soup and salad served with some Chiabata - Happy Mother's Day for real -
