As you can clearly tell - we are a family that is all about communicating with FOOD, Laughing around the table for Hours while grazing on whatever it may be - from agnello speducci - with some Asiago Cheese - some prosciutto (homemade of course) or some soporsata (homemade of course) my brother-in-law and his friends get together in Novemberish and make sausages - its amazing cause he can't eat them so WE GET LOTS - its like his bomboniere that you get when you visit his home :::::)))))) - TRANSLATION (italian gift received at a wedding from the bride and groom) - cause every get together he gives you some to take home - Gave some even to the Newf (my daughter's bf) sorry!!!- we call him that cause thats what he is - from Newfoundland - AND HE LOVES IT
We would also slice up some tomatoes and pour some olive oil and a pinch of salt and pepper AND basil sliced - feast out
and of course ENSALADA - however this is a twist
Cut and Segment Oranges
Cut up One Red Onion
mix together with Olive Oil and Pepper - Enjoy - I assure you, this will be an addition to your Ensalada - its Orange Salada
and dip some chiabata in the juice - Heaven ***!!!!
- we also slice up Anise and add olive oil, balsamic and salt and pepper - Amazing -
So back to my Hubby cooking Speducci while I was in Florida with my Sistas - - -
One day my hubby was on the deck bbq-ing some Italian Shish Ka Bobs (agnello Speducci) which are lamb shishkies - - the package has 20 usually vacuum backed (purchase at an Italian Butcher) - about 50 to 75cents a piece - they are very thin in comparison to a regular Shish Ka Bob and only take minutes to grill - - Anyways he was outside bbq-ing as I was saying and had 40 speducci (my daughter's a vegetarian so he put some veggies ones on as well
which means that those 40 speducci were for him and my son (ONLY) - so the neighbour (who I might add is Italian - Caker style) - asked my hub what he was making because obvi it smelt amazing - and because he saw my hubby continuously give these speducci to my son and he was eating them as well (best immediately off the bbq - just add some salt at the end of the grilling when they are just about done cooking. Eat standing around the BBQ - talking, some beer, wine - Whatever as long as its alcohol (LOL)
So my husband tells the neighbour (italian/caker) and not MY STYLE OF CAKER - they are speducci) he doesn't understand so my husband says would you like to try them - - so of course my hub hands over about 5 - they eat them and ask my hub where to get some because he is going to have a party and would like to serve them -
OF COURSE hubby says - sure I'll pick them up for you - how many would you like, (he says 20 - he is having a party) - so my husband says sure - gets them for them.
That next Saturday - neighbour is having a party with about 20 people and is cooking the speducci (20) OMG are you kidding me - ONE each - my son and husband can eat 20 to 30 each - wow - I guess we are unbelievably over endulgant people, when it comes to serving guests I guess LOL (we would have at least 6 to 10 per guest (along with all the other stuff we would have at a party) - to continue....
the neighbour says to my husband "do you have any more of those speducci" cause i served one each and my family loves them and wants more - hubby said OMG one each are you kidding my - my son eats 30 - what were you thinking, I don't have a butcher in my basement - WOW is all I can say -
segway to Veal Cutlets - and The New Years Eve at our Friends
The night of 100 Veals
made for 12 people - hello - along with o'dourves and Pasta coming out of our Ying Yang - (this is for you Doug & Dolores) LOL
I have never seen so much pasta and veal cutlets made for a gathering of 12 - (did you think you were serving a banquet hall (LOL) (Italiano Wedding)
OMG I mean really - enough food to serve the whole neighbourhood - not 20 speducci - (and I must say they are not Italianos) - however Mr D loves to cook and he does it so well :)
Veal Scallopini and/or Leg of Veal (sliced thinly)
parmesan cheese
flour
bread crumbs
egg -
set up your dredging stations (Flour/Parmesan mix) (Egg) (breadcrumbs)
Dredge in flour, egg and breadcrumbs - set on tray - do not stack onto each other -
In a deep frying pan - pour 2 cups veg or canola oil and heat for frying.
Fry and do not crowd pan with veals, once brown after turning over they are done - place on rack to drain off oil -
For a quick solution to standing and crying you can also place on a sheet pan, lined with Parchment or Foil - and put some oil so Veals don't stick. Place veals as many as will fit and bake 350 degrees, turning once until browned
serve with Pasta and Rapini and you guessed in Ensalada For Sure - if you want to you can even put these veals into a tomatoe sauce in the oven and bake topped with mozzarella cheese - and some parsley - very good even if you have left over veals to make another day-another meal -
Unfortunately there are never left over Veal in our Home - however I don't make 100 Veals Like Doug - LOL - We love you xoxo
