Little Chicken legs are actually Rabbit Foo Foo - Sorry we Lied
And this is where it started - the food lies - wow mortified children when they find out years later that their parents lie lie lie - from Rabbit (better known as chicken) and Calamari (better known as Italian Onion Rings) will fill you in on this later. Back to the Rabbit foo foo
Sitting around the table - talking, munching on some bread dipped in olive oil and balsamic, having some olives (cause mom opened a jar to add to the foo foo) - while mom is still preparing the "Chicken" - Dad - I don't know what he was thinking answers the question my daughter asked "whats for dinner daddy" - Hubby with all the sensitivity he could muster up starts telling my daughter we are having chicken and is singing little rabbit foo foo - I am banging on the counter and stamping my feet to get this jackasses attention - however he simply continues singing - my daughter is a very smart cookie so she clues in and when she sees the "Chicken" that I bring to the table immediately knows there is something NOT QUITE RIGHT ABOUT THIS CHICKEN - Wow what an disaster - My daughter starts crying and my husband begins the LIE - this is chicken not rabbit - Mom skinned some of the meat off the bones thats why the legs look so skinny - I bang the table and just tell him to STOP THE LIES - We have her convinced to try the "Chicken" and she loves it - (did I tell you she is 4 years old) - my son (the CARNIVORE)
was chowing down on his FOO FOO and almost done -
My daughter never really liked meat from the beginning - while I was pregnant with her I could not eat meat and when she was born I could not eat meat - my hubby's family had to bring meat already prepared for my hubby if he was to eat meat during these very sensitive (meat hating days).
Rabbit FOO FOO recipe
1 rabbit
1 can or jar of black olives (pitted or not) up to you
2 cloves of garlic
1/3 cup of cognac (thats right i said cognac) trust hubby freaks out over this addition
1/3 cup white wine (please always use a good wine that you would drink-trust me makes all the difference in the world to your end result)
olive oil
before you begin the cooking you must - soak rabbit in water and vinegar and remove any and all of the fat from the rabbit -
in a large skillet (deep) - add olive oil and then cut up rabbit once oil is hot - turn down to saute until the rabbit is browned- add garlic and olives - cook a few minutes - then add cognac
once the cognac has cooked down add the wine and saute for a few minutes - the rabbit should be browned but tender - Serve with Rice and Green Beans or Rapini and/or you can also add some potatoes to this rabbit treat and they come out delisiouso.
For the Green Beans -
Green Beans
Garlic
Olive Oil
Lemon Juice and lemon peel (grated) or White vinegar or Balsamic (which ever you prefer)
salt and pepper
In a pot boil water - cut ends of green beans and place in salted boiling water - cook al dente
in the mean time - chop up garlic finely - in a bowl mix garlic, olive oil and whichever acid you want - when beans are done put immediately into olive mixture and toss - the beans will absorb the goodness
Ensalada is a No Brainer -
