Greek Chicken - and a comparison in my Bestest Friends & Things they say

My lovely, intelligent friends make me laugh each time I speak with them (which I will say is quite often) so I do laugh alot that God - That is and must be what keeps me young at heart -

So my Friend (Shel) calls me last night, I have been away from work for some time due to surgery on a broken leg, so Shel says "oh ya - do you know who says hi to you,

(ME) No I don't know -
(SHEL) I don't know either -



We began laughing so damned hard my stomach and cheeks hurt - I haven't laughed that hard in some time, however somehow whenever I speak to my Bestest Friends, they have a way of  making me laugh so hard I almost (you know) - P - I think they have all hung around me too long (cause I'm usually the funny one)

This is for my other sista (Soph) a little late however our Easter was the same this year Orthodox and RC. 

Greek Chicken 

1 whole chicken cut into pieces (or you may use breasts only)
5 pnds of yukon gold potatoes cut into wedges
cinnamon
salt
pepper
butter
olive oil

Wash chicken and pat dry in a roasting pan coat chicken with cinnamon ( i love alot ) so i really coat it well, add olive oil and 1/2 pnd butter cut into cubes - bake at 350 degrees for about 1/2 hr
and then add water to cover up 1/4 of chicken, bake another 1/2 hour then add potatoes and continue baking - about 2 hours total

Typically served with GREEK Salad 

tomatoes
cucumber
mint leaves
feta cheese
kalamata olives
red onions
oregano
salt
pepper
olive oil
white vinegar

I would also make some veg - cause salad only with all this meat and potatoes doesn't cut it for my hubby - he is a big fan of several veggies for dinner (Green Beans with Garlic would be good and/or Broccoli



mix together and have some good chiabata to soak up the cinnamon sauce - This simply is delisious - My family loves this and when my daughter ate meat this was truly one of her favs.

OPA !!!!! Break some dishes (if you like) and dance your heart away

in the meantime also in a bowl mix potatoes with cinnamon and pepper
