Happy Easter Sunday - Family around the table for the Lamb of God Agnello di Dio Feast Buona Pasqua

I must say that this is the most enjoyed day of the year for our Family.  Easter Sunday.  My beautiful son was born on Easter Sunday, which is also some years Earth Day, to the kids National Pot Day and to me - one of the luckiest days of my life (my son was born) - Happy Easter to all and Happy Birthday Anth Buona Pasqua






The family would gather around 1 pm, and we would have been up for hours preparing the Lamb - the night before I begin soaking the lamb in hot water to remove all of the fat, and add a little vinegar to soften and remove blood and lamby smell.  I would buy a leg of lamb - cut up into bite size pieces.  Once all the lamb is clean I would saute about 5 pounds in olive oil and once browned would add some cognac - saute for a while and once very tender and thoroughly cooked beat about 12 eggs with parmesan cheese 1/3 cup of white wine and add to lamb.  Mix until egg is cooked (this is the most delightful and delisiouso serving of lamb one will ever experience) trust me once you try this you will crave it all year.  (EaStEr LaMb FeAsT) yahoo.  Its here.


We would also bbq lamb chops of course after marinading them for a day in garlic, white wine, parsley, pepper and a bit of salt.  This too is delightful.

Now my story - One Easter Sunday, unfortunately my sister, brother-in-law and neices were unable to attend our home because they were going to her mother's home (their father was ill and my sister-in-law cooked and took the food there.) 


My mother in law was in Glory Land because she loves my Lamb - the way I prepare and cook lamb is her favorite and she says its the best.  My brother-in-law doesn't find this too impressive because he is a fabulous cook and there is no way a freaking CAKER is going to outdo or him and he could never be in the shadow of a CAKER for cooking - especially the EaStEr LaMb FeAsT - hahahah - sorry left in the dust

boccagino cheese,
 honey melon and/or cantelope slice, wrapped with procutto,
some olives and a piece of chiabatta -

Fresh Fettucini with a beautiful rich meat sauce (not the meat sauce like ground beef meat sauce)






Meat Sauce


Veal Shank (boneless)
Ground Veal
Baby Back Ribs


Saute onions and garlic in olive oil


Add veal shank and ribs to brown - remove
add a tablespoon of tomato paste and cook about 5 minutes - add red wine, (about 1/3 cup)
cook about 10 minutes and then add tomato sauce - place meat back into sauce -


in the meantime make meatballs -


ground veal,
 parsley, parmesan cheese and a bit of
breadcrumbs,
pepper - mix together and form into meatballs. 
After the sauce has been sauted for about 1 1/2 to 2 hours add meatballs - cook another hour and serve with fresh fettucini.  


This is fabulous - beyond any words  -  the best sauce imaginable.  Love Love Love


We will also have Artichokes carciofi - Mama (NONNA) makes those (she's the only one that makes them to die for)




You must trim the artichokes to the light green and removed the choke - cook in boiling water with lemon and garlic about 1/2 hour (these are my daughter's favorite by far, Nonna always makes carciofi for manzy)


Stuffed Mushrooms is another Easter Feast item on the menu


Large Mushrooms (white)
(remove stems) saute in olive oil -
garlic and add
pepper,
parsley,
parmesan cheese, bread crumbs -


put mixture in bottom of mushrooms and bake 350 for 1/2 hour - Buona Pasqua


Did I also say that you must serve Ensalata and Chechina Nonna (this is Eye of the Round)


Eye of the Round Roast



Carrots,
Celery,
Onion,
Garlic,
Olive Oil and
6 potatoes


Saute eye of the round until browned on all sides and place into a roast pan on top of 8 carrots, 4 celery stalks, 2 onions - 6 cloves of garlic, and potatoes


Cover and Roast for about 2 1/2 hrs. (depending on how large your roast is) - once cooked remove all of the veggies and put into a pot, along with the juice from the roast - mash together and this will become  your gravy for the roast. 


This while my daughter still ate meat was her favorite (chechina Nonna) - Manzy is a vegetarian, however thank God she eats Fish, and Eggs, 


slice roast in about 1/4 inch rounds and the leave on platter in a line - as if roast still in one piece - pour some of the gravy veggie on top down the middle and the rest in a gravy boat for additional goodness.

Of Course its not over - there is still the fruit platter and then all of the Cakes - Cookies Expresso, etc.






So a few days later my brother-in-law visited the mother-in-law and he asked how her Easter had been and she replied " Dabbe maka da Agnello di Dio and it wasa the bescha ever - she make so good not like you - you cook too much - "
