Daugher is a Vegetarian so we improvise Cabbage Rolls with a Twist of Beans

Good Day my Lovelies -

To begin I must say - I am Hungarian (daddy) and Ukrainian (mommy) - and have introduced my culture to these Italianos and they LOVE LOVE LOVE all my recipes - except Sheppards Pie for some unknown reason - cause it is delisious (ah what the H do they know anyways) LOL

Hope you are enjoying my story as much as I am enjoying writing and remembering all the hilarious things that have happened over the 32 years my honey and I have been together.  When our precious Angel came along, I can honestly say she cried so loud that the Doctor recommended we get her a pacifier immediately in order that we avoid herniation.  LOL she is very verbal to say the least.  No holding back for her.  She has always been very very verbal (even when her brother came along) Poor kid never had the opportunity to speak because she would answer for him. 

She has become a vegetarian (however thank God she eats fish and eggs).  Therefore when her and my niece became vegetarians I would also make sure that when I had a dinner party at my house (of course I would make a veggie dish or two or three for the two of them) - somehow this didn't work out the same when we went to our families (except my mother-in-law) She would always have carchofs """translation" Artichokes for Manzy and some pasta dish with ricotta :) - I would also bring something for Manzy to eat from Salmon, to You got it Cabbage Rolls with a Twist of Beans - (good segway ha?)

Same thing - burn your friggin fingers with the steaming of the cabbage (LOL) I never seem to master this - honestly have been doing this for many years - helped my mom when I was little, however when I was little my poor darling mother would burn her damned fingers. 

Anyways you will need



Hello - Cabbage
Dill
1 can rinsed Mixed beans
1 cup Long Grain Rice
1 large Onion
frozen or 1 can corn
1 package cubbed tofu Firm
olive oil, butter, salt and pepper
sour cream
canned tomatoes
vegetable broth - either home made or one organic box and water (half broth half water)

So Cut Core, Steam Cabbage core side down and begin removing loosened leaves with steaming. place in collander and in the meantime mix all ingedients together, NOT SOUR CREAM, however there is a twist, the middle of the cabbage, small delicate portions-  you can chop up and add to this mixture.  Please be aware you may also leave out tofu (firm) if you don't want it. 

Stuff cabbage with mixture of ingredients and then fold like an envelope and place seam down in roasting pan, on top of olive oil and tomatoes along with some dill mixture so as not to stick
continue as previous, layer tomatoe and some dabs of butter -
once all cabbage rolls completed - cover with huge outside leaves that are tough and no good to eat so that your rolls are protected from scortching and cover with liquid. 
Bake 350 degrees (This is as good as the meat mixture in my opinion) and Everybodys happy.
