I need to say that I love my kids and nieces appreciation of my cabbage rolls. The work that goes into making these babies is painful (I mean it, from burning your friggin fingers with the damned steamed cabbage to backbreaking standing to roll them - they better love them or its Rapini Mama shots)
Everyone that has ever had these cabbage rolls love them - or they are just saying so cause they are scared to say otherwise LOL
Cabbage Rolls ala My Mom
Two heads of Cabbage (you can use one curly/savoy cabbage and one regular cabbage)
2 pounds ground veal or beef and/or combo - for a little bit more flavour you can add a bit of ground pork
1 large onion
1 1/2 cups long grain rice
fresh dill
2 cans tomatoes
water to cover
butter
olive oil
salt and pepper
sour cream
Cut core from bottom of cabbages - STEAM core side down and then as soon as leaves begin to loosen peel off and put in collander to cool so you can handle them (you will burn yourself taking them off thats enough I think LOL)
in the mean time while cabbage is steaming prepare your filling
mix in a large bowl all ingredients (NOT THE SOUR CREAM * Hello thats for adding to finished Rolls)
meat is uncooked and rice is uncooked
when all cabbage steamed start filling -
put about a 1/4 cup of filling (depending on size the leaves are because they get smaller in the middle)
don't overfill or they will separate
once filled - place in large roasting pan like this:::::::::
layer, some tomatoe on bottom of pan with olive oil, start placing rolls until bottom covered of pan
then put tomatoe and some dill, then repeat until all done
put some left over leaves on top so that it keeps them moist and they won't burn, then put rest of tomatoe on top with remaining dill, butter and add water just to cover the cabbage rolls - this will obvi cook the rice and meat - cook for about 2 1/2 hours at 350 degrees - make sure you check periodically to see if all liquid absorbed and once rice is cooked - if you do require more liquid just add it - it will be fine
serve with Sour Cream and butter and Pepper -
