OR AS WE KNOW IT - BUCKLE UP FOR SAFETY - BAKED COD
Ingredients
Serves: 4
- 500 g red potatoes or yukon gold, peeled and cut in 1.5 cm-thick slices
- 1 medium onion, thinly sliced
- 1 tablespoon olive oil
- ½ teaspoon salt
- 4 roma tomatoes, seeded and coarsely chopped, one jar of tomatoe sauce
- 3 cloves garlic, minced
- 4 pieces of cod, snapper or other thick, firm-fleshed white fish steaks, cut into 5 cm chunks
- red/yellow/orange peppers
- Preheat oven to 180°C. Combine potato, onion, oil and half the salt in a medium baking dish.
- Bake for 20 minutes, stirring mixture once.
- Stir tomato, garlic into potato mixture. Top with fish steaks. TOP WITH SOME OIL OIL AND Sprinkle with remaining salt.
- Bake, uncovered, just until potatoes are cooked through, 20 to 30 minutes. Transfer fish and vegetable mixture to serving plates. Spoon pan juices over each serving.
I SERVE A SIDE OF BROCCOLINI SAUTED WITH GARLIC IN OIL OIL / SPLASH OF WATER TO COOK
