OR AS WE KNOW IT - BUCKLE UP FOR SAFETY - BAKED COD 


Ingredients 
Serves: 4 

  • 500 g red potatoes or yukon gold, peeled and cut in 1.5 cm-thick slices
  • 1 medium onion, thinly sliced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • 4 roma tomatoes, seeded and coarsely chopped, one jar of tomatoe sauce 


  • 3 cloves garlic, minced
  • 4 pieces of cod,  snapper or other thick, firm-fleshed white fish steaks, cut into 5 cm chunks
  • red/yellow/orange peppers 




 

  1. Preheat oven to 180°C. Combine potato, onion, oil and half the salt in a medium baking dish.
  2. Bake for 20 minutes, stirring mixture once.
  3. Stir tomato, garlic  into potato mixture.   Top with fish steaks. TOP WITH SOME OIL OIL AND Sprinkle with remaining salt.
  4. Bake, uncovered, just until potatoes are cooked through, 20 to 30 minutes. Transfer fish and vegetable mixture to serving plates. Spoon pan juices over each serving.
I SERVE A SIDE OF BROCCOLINI SAUTED WITH GARLIC IN OIL OIL / SPLASH OF WATER TO COOK
